Laura in a kitchen #5 Healthy muffins

Welcome back to my "Laura in a kitchen" series! (See more) This time I'm going to talk about/ make healthy banana muffin. I make those muffins every week to bring in my lunchbox to school.  I really like them i they give that little extra energy.
This is what you are going to need (you will get 8 - 12 muffins depending on how big you make them):
  • 2 bananas
  • 2 eggs
  • 50 grams of coconut oil
  • 2-3 tablespoons of honey
  • 175 grams of almonds/almond flour
  • 25 grams of desiccated coconut


Take the bananas, eggs, coconut oil and honey and blend it all to getter in a blender. Blend your almonds until they are as blended as you want then mix it with the desiccated coconut but if you have almond flour just use that.  Now you wanna mix it all together - I would recommend using a spatula for this.
Now you must scale your dough in the forms of paper. Bake the muffins in the oven at 200 digress Celsius for about 20 minutes or until they are done!

Velkommen til min series ved navn "Laura in a Kitchen" (se flere post here) Denne gang vil jeg lave sunde banan muffins. Jeg laver dem hver uge for at tage dem med i madpakken. De giver lige det ekstra skud af energi som jeg altid synes at have brug for! ;)
Dette skal du bruge (der bliver cirka 8-12 muffins alt efter din størrelses af muffinforme):
  • 2 modne bananer
  • 2 æg
  • 50 g kokosolie
  • 2-3 spsk honning
  • 175 g mandelmel eller madler 
  • 25 g kokosmel


Kom banan, æg, kokosolie og honning i en blender. Blend dine mandler, så de er som du vil have dem og bland dem med dit kokosmel men hvis du hellere vil bruge mandelmel gør du bare det. Fordel dejen i muffinforme. bag kagerne i ovnen ved 200 grader i ca. 15-20 minutter, eller til de er færdige.
